Everyday Paleo's Everyday Meatloaf

I picked up Everyday Paleo at the library recently. I'm going to buy the book. It's just that I've made a deal with myself about impulsive book shopping. I like books. I like them to be around me like hundreds of quiet little smart friends. The problem is that I often buy before I really know I'll like or read the book. My deal is that I have to be certain before I buy and often that means living with the book from the library for a bit. I've probably saved myself countless hundreds of dollars this way. Anyway...

Tonight I made the Everyday Meatloaf from the book. I'm happy to say that this Paleo comfort food was a winner with all four of the diverse eaters I feed on a regular basis. Believe me, I always have someone being finicky at the table. Sometimes that's me. So when I find something we all like, it goes on the make again and again list.

The ingredients are pretty simple, though you need to have almond flour (NOT almond meal) on hand. I like to order almond flour in 5 pound bags from Honeyville. I made two substitutions, something I frequently do to use what I have on hand and avoid special trips to the store. Instead of red onion, I used fresh green onions from the Broad Ripple Farmer's Market and since I had no fresh basil, I substituted dried, in a much reduced amount, of course.

I'd think that if you have any confidence in experimenting, you could use the basic formula of meat, egg and almond flour to make your own tasty meatloaf. Do it. Have fun and enjoy!
